4 corn tortillas
1/2 C organic refried black beans
4 cage free, organic eggs
1 large tomato, chopped
shredded cheese (optional)
2-4 tsp. olive oil (or other oil) for cooking tortillas and eggs
Cook corn tortillas in a pan with some oil on medium heat. Remove tortillas when they become golden brown and puff up slightly. Warm the refried black beans. Fry eggs to your preference in a non stick pan with remaining oil. Assemble the tortillas on two plates adding black beans, eggs, tomato, salsa, cilantro, cheese, avocado, and anything else you'd like on top.
