Huevos rancheros

Organic black beans, organic salsa and organic eggs. Comfort foods can be healthy! Healthy fats are so important for uterine and ovary health and are essential for cellular health all around. Add some avocado for another fertility boost!


4 corn tortillas

1/2 C organic refried black beans

4 cage free, organic eggs

1 large tomato, chopped


cilantro, chopped

shredded cheese (optional)

avocado (optional)

2-4 tsp. olive oil (or other oil) for cooking tortillas and eggs


Cook corn tortillas in a pan with some oil on medium heat. Remove tortillas when they become golden brown and puff up slightly. Warm the refried black beans. Fry eggs to your preference in a non stick pan with remaining oil. Assemble the tortillas on two plates adding black beans, eggs, tomato, salsa, cilantro, cheese, avocado, and anything else you'd like on top.
